Amazing crock pot roast with potatoes and carrots is such a delicious and moist dinner. If you are going to work, or just have a busy day, place the roast, potatoes and the carrots in the crock pot and by dinner time you will be happy that you made this.

I am not a big meat eater when it comes to roast and steak, but I am pretty sure that I could have eaten this whole roast by myself! It was so moist and I couldn’t even cut it. The roast just fell apart. Then we put some butter, and a little more salt and pepper on the potatoes and carrots and wow!! It was a fabulous dinner. Loaded with so much flavor.

What Ingredients Do I Need to Make Amazing Crock Pot Roast with Potatoes and Carrots?

Here’s a list of ingredients you’ll need to make this Roast Meal (scroll down for the full recipe):

  • 1 (4 pound) roast
  • 1-2 teaspoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-2 garlic cloves, pressed
  • 4-5 medium Yukon gold potatoes, peeled and cut into chunks
  • 3-4 large carrots, (scrubbed well, or peeled) cut into slices
  • 1 cup water, or beef broth
  • 1 package dried onion soup
  • 1 teaspoon thyme
  • 1 teaspoon dried parsley (for garnishing after cooking)

How Do I Make Amazing Crock Pot Roast with Potatoes and Carrots?

Here’s the simple steps you’ll follow to make this Roast Meal (scroll down for the full recipe):

  • In a large skillet, place 1-2 teaspoons olive oil.
  • Put a pound roast in the pan and then sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Sear the roast on all sides. (This helps lock in flavor)
  • Then in the crock pot, add the roast, sprinkle a package of dried onion soup and 1 teaspoon thyme on top of the roast,.
  • Add 1-2 pressed garlic cloves, then add 4-5 medium Yukon Gold potatoes (peeled and cut into chunks) and 3-4 large (peeled or scrubbed well) sliced carrots.
  • Add 1 cup beef broth or water and place the lid on.
  • Cook for 8-10 hours on low. (Can cook for 4-6 hours on high). We just like low because the roast falls apart and is so tender.
  • Garnish with 1 teaspoon dried parsley and serve. We put butter on our potatoes and carrots.

However, I cooked mine all night and when my son came up for breakfast, he said “I prefer the smell of bacon for breakfast”! Ha ha. That night he liked the smell of the roast, and he liked eating it even better.

  • Searing meat is a technique used in which the surface of the meat is cooked at high temperature until a browned crust forms.

Can I Use a Slow Cooker Instead of a Crock Pot to make Amazing Crock Pot Roast with Potatoes and Carrots?

So I suggested that she make pan sugar cookies instead, because they taste just as good, and they are just a lot less work. I might just have to show her my favorite recipe. And you could decorate them however you want!

Tips and Tricks For Crock Pot Roast with Potatoes and Carrots:

  • We like to serve our roast with some gravy made from one package of store bought gravy packet mix and then I add 1 cup of juice from the roast and 2 – 3 Tablespoons flour mixed in with 1/4 cup cold water. Mix it all together and cook until it thickens.
  • If you want a change, you could also add some sweet potatoes.
  • Also some times I put butter over the potatoes and carrots and eat them that way. So yummy.
  • Searing the roast first helps lock in moisture and flavor when cooking it.

Ingredients

  • 1 (4 pound) roast

          I used a eye of the round because they were buy one get one free. I have also used a rump roast and it was great as well. I like to get a roast with just a little bit of fat for flavoring, but not too much fat because I don’t want to pay for fat. I hope this helps.

      Sorry, but pork roast in a slow cooker like this sucked in my opinion. The seasoning never really roasts in the meat, so while outside is tasty, the meat itself is bland and liquid just has the veggies sitting in broth like in soup. Forget it! Roast in the oven the good ol fashion way!

    What is the texture of the vegetables like after cooking them for this long? I don’t want them to be mushy. Also, would using whole baby carrots work?

      I have found that it takes a bit of time to get the vegetables cooked. The potatoes might get a little soft, but the carrots are usually just right. I don’t mind the potatoes to be a little soft because I usually mash them and put gravy on them. And you can always stop cooking the dish as soon as the middle of the meat reaches 145 – 160 degrees. The carrots take so long to cook in the crock pot, I always cut them in smaller pieces. Thank you, and I hope this helps!
