Let thecheeseair out for a few moments, and smell again. If the rind still has a slight smell, but the paste (the inside of thecheese) smells creamy, then thecheese is fine to eat. If the whole piece ofbriestill smells strongly of ammonia after a few minutes, thecheesehas probably turned.

Ingredients

  • 1 medium round loaf of bread I prefer sourdough
  • 1 round block brie cheese rind removed
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon garlic salt
  • 1/2 cup candied walnuts
  • 1/2 cup bacon crumbles plus more for garnish
  • 1/2 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 350F. Line a small baking sheet with foil and set aside.

  • Cut the top of the bread bowl off and set aside. Place the brie on the bread and use a paring knife to cut into the bread around the cheese (to create the hole for the cheese). Cut about an inch into the bread. Use your fingers to hollow out the hole for the brie. Use the knife to cut slits around the perimeter of the bread, but be sure not to cut all the way to the middle. Leave a bit of bread as to keep the shape in tact. You will tear off these pieces later to dip into the cheese.

  • Mix the melted butter and garlic salt in a small bowl. Drizzle the butter over the bread bowl, onto the sides and into the middle. Sprinkle with more herbs if you have favorites.

  • Set the brie down into the bread bowl (make sure you've removed the casing). Top with the walnuts and bacon and then mozzarella. Top with the top of the bread.

  • Bake for 20-30 minutes until the bread is crispy and toasted and the cheese is fully melted. Once you remove the top, you can garnish with more walnuts and bacon.

  • Tear off the side pieces of bread and dip into the cheese for the perfect appetizer!

FAQs

Do you take the rind off brie before baking? ›

Do you take the rind off before baking? Keep the rind on, as it will help the cheese hold its shape so it doesn't all melt out. The rind is also edible, so you can enjoy it with the melted cheese, or simply remove the top layer after baking and dunk in crusty bread like a fondue.

Does the cheese skin stay on when serving baked brie? ›

In this baked brie recipe, I do not remove the rind because I need the surface to spread my jam and to add my beautiful nuts and toppings. The rind keeps the wheel of cheese together, and once you take it out of the oven and slice into it, all the gooey deliciousness oozes out like a nice surprise!

Why is my baked brie rubbery? ›

In fact, overcooking it, especially if you haven't cut the rind, may actually re-harden the cheese and make it tough and unappetizing.

Is brie better baked or cold? ›

While baked Brie is likely the most famous way to serve Brie, it's not necessary to bake or even warm Brie up to enjoy it. You can eat Brie cold, as is, either adding it to a sandwich or as an appetizer with some fruit, bread, or crackers.

Are you supposed to remove the skin from brie cheese? ›

Yes, you can. The skin, better known as the rind, on brie adds extra flavour and potency to the cheese. However, you don't need to if you find brie flavoursome enough on its own.

How long should Brie sit out before baking? ›

Unwrap your Brie and place your wheel on a small piece of parchment paper on a baking sheet. Note: if you have the time, take the cheese out of the refrigerator and let it sit on the counter for an hour before baking. This is optional but helps the cheese bake more evenly. Bake for 10-20 minutes in the oven.

What jam goes best with brie? ›

Brie cheese is the perfect partner to jam! It pairs beautifully with jam varieties, such as: fig, apricot, blackberry, boysenberry or cherry jam.

Why does my brie rind taste like ammonia? ›

It may be a turnoff but it's a consequence of aging, especially for bloomy-rind cheeses like Brie. As these cheeses ripen, their surface molds break down protein into amino acids and one byproduct of that breakdown is ammonia. When a Brie is aging at the creamery on a rack, the ammonia is evacuated through ventilation.

Can you eat brie 5 days out of date? ›

Soft cheeses such as Brie and Camembert have a shorter shelf life. Unopened, they typically last for a few weeks to a couple of months past their 'best by' date when refrigerated.

Can you eat the hard outside of brie cheese? ›

Yes, you can eat the rind on Brie. But what is it made of? The rind on Brie is a bloomy rind that grows from the molds and bacteria used to make Brie. According to the U.S. Department of Agriculture (USDA), these types of mold are beneficial and safe to consume.

What happens if you bake brie too long? ›

Be careful not to overbake the brie. The cheese can go from a melty lava-like texture to hard in the middle if it's in the oven for too long.

Why does brie taste weird? ›

As Brie cheese ages, it develops a stronger flavor and becomes more complex, with earthy and nutty undertones. The rind of Brie has a slightly tangy and mushroom-like flavor that adds to the overall taste experience.

What pairs well with brie? ›

As mentioned, brie's mild, yet buttery and nutty flavor pairs well with so many things. Some examples are salami, prosciutto, pickles, apricots, apples, pears, dates, almonds, candied walnuts, and pecans.

How do the French eat brie? ›

If you want to serve cheese as the French do, you should serve it to your dinner guests as an individual course before your dessert. Doing this allows the Brie to have a moment in the spotlight. However, many people also serve Brie as an appetizer with fruit, meat, and crackers.

Can dogs eat brie? ›

Cheeses that have herbs, garlic, raisins, or other added flavors should also be avoided. Garlic and raisins are some of the most toxic foods for dogs and can cause serious health issues. Goat cheese, brie, and feta all have high levels of saturated fat, which make them unhealthy for dogs to consume.

What is the white layer on the outside of brie cheese? ›

That marshmallowy white stuff on the outside of your brie is called a bloomy rind. These cheeses are coated with edible molds, such as Penicillium candidum. The cheeses ripen from the outside-inwards. Sometimes, a seductive gooey layer called the “creamline” forms around the fudgy interior.

Can you melt The rind on Brie? ›

The long answer is when cooking brie cheese recipes, the cheese will melt but the rind won't. The rind will break down a little bit, but it won't evaporate into thin air.

How do you cut brie before baking? ›

Use a sharp knife to cut along the top inside edge of the round of brie, then remove the top rind. If the top is shaggy or uneven, don't worry, it will smooth as it bakes. Place the brie in a 6-8 ounce gratin baking dish or cast-iron pan. Bake for 15-20 minutes or until the cheese is melted and bubbly.
