I love this recipe b/c it it so simple and the "fillers" for the meatloaf are just vegetables and a small amount of bread crumbs. It holds together and cooks up perfectly, with no eggs. For optional, I used capers and Worcestershire.

Superb! I grated the carrot and finely chopped the onion and other veggies, along with a few mushrooms, the Worcestershire and threw in an egg. Nice portions!

Making in an Airbnb without all ingredients available, but seems to be a good basic recipe. I have to say that I did not have the veggies except garlic! So, I fell back on the tried and true, added 2 eggs, croutons, and shredded cheese. I'm used to eyeballing recipes, so it should be great! We'll see what the kids think!

Completely fell apart. Next time I’ll trust my instincts and add an egg. Hopefully, it will hold together once chilled. I usually only make meatloaf for the next day sandwiches, so fingers crossed it’s not a complete waste.

This was so tasty! I added spinach to the veggie mix for added oomph, otherwise kept true to the recipe. Everyone (including three children under 10) ate it all up and asked for more! This will be my new go-to meatloaf recipe.

I made this with out the bread crumbs or the celery and enjoyed it very much. I added an egg, the Worcestershire sauce and the olives. My quibble is that it did not hold together very well after it was cut, which is probably because of the lack of bread crumbs.

I made the oval round too high, it took awhile longer to cook. It would be nice for recipe to say: "make the quarter round X" high and approximately X " wide...easier to get a 30 minute meal that way! Thanks!

This meatloaf was juicy and packed with flavor. I expanded a simple meatloaf dinner with a side of broccoli into five star meatloaf sandwiches. My mom requested the meatloaf sandwich three days in a row! I toasted ciabatta bread with olive oil/rosemary, heated the meatloaf ,added a tablespoon of ketchup and served. Simplicity at its finest. I choose the Worcestershire as my option.

Really good: extra veggies and not like a big burger. Used1/2 lb @ . Turkey, beef, pork and beef blend. Latter reduced to $1.50/lb: Score!! 1 egg( unnecessary)1/3 c. @Hatch green chile sauce(El Pinto) and ketchup. Sweat veg, included bell pepper to use up. Bake 375 parchment, sheet pan about 1 hr. Omit too sweet ketchup. Came out soft with crispy bottom. Single serving shepherd's pie is next. Quesadilla?

I added an egg, used seasoned bread crumbs, and added two tablespoons of Worcheshire sauce. Because I didn’t have the full amount of ketchup, I added about 3 tablespoons of Trader Joe’s General Tso’s Stir Fry Sauce. Formed it into a loaf and placed it in a greased loaf pan. Topped it with a bit more of the stir fry sauce. Yum!!

Traditional mirepoix (Onion, carrots, celery. 2:1:1) plus the garlic sautéed in butter after dicing in processor solved the texture issues mentioned in other comments.BBQ sauce with horseradish and lemon was substituted for the ketchup.The mixture was cooked in a loaf and allowed a generous amount of time to cool to allow for slicing.Delicious and simple comfort food!

Used one pound of beef, other ingredients not reduced. Added Worcestershire sauce.

I think this would be better if the veggies were sauted first to soften them. Didn't care for the texture of crunchy veggies.

I was out of ketchup so used a pasta sauce and it was very flavorful. I also used an egg with seemed to hold it together nicely.

Pantry cooking

I did not like it at all. It had a weird texture. I couldn't finish my plate. Sorry, this one is a dud.
