Fortunately, drying it out makes it much easier to work with. It dries out normally on its own when exposed to air. You can mix a quick-drying powder into fresh marzipan to cut out even more of the wait. Whether you’re making marzipan figures or using marzipan to cover baked goods, it will hold its shape much better when it’s dry.

It’s easy to find online and at most craft or cake-decorating stores. It works on fresh marzipan you haven’t rolled out or molded yet. There are some other things you can use in its place as well, like gum paste.[1]
