Easy Lard-Free Tamales

If you’re wanting to make tamales at home but are short on time, this Instant Pot Tamales recipe is for you!

I grew up enjoying tamales around the holidays, especially on Christmas Day or Christmas Eve. It's a special tradition that I hope to carry on!

Now that my husband and I are hosting holidays and celebrations in our home, I wanted to learn how to make tamales from scratch.

They're fun to make and a family favorite. Plus you can't beat that savory fluffy bite.

Ingredient Notes

  • Masa: Make masa from scratch using masa harina, water, and vegetable oil. No lard, no problem!
  • Filling: Savory tamales can be filled with shredded beef, fresh green chiles, shredded chicken, tender pork, seasoned black beans, or even seafood.

How to Make Instant Pot Tamales

I have made these tamales on numerous occasions and feel confident in saying they're pretty fail-proof and forgiving.

Step 1: Cook your filling

Start by preparing your filling or multiple fillings. Tamales are commonly stuffed with pork, chicken, beef, beans, and cheese. Once your desired fillings are cooked, set aside.

Step 2: Make the masa

To make the masa dough, combine masa harina, water, and vegetable oil together in a small mixing bowl. Mix using your hands until a soft dough forms.

Step 3: Assemble the tamales

Next up, assembling! Prepare your workstation by laying out several dry corn husks along with the prepared filling and masa.

To assemble each tamal, use your fingers or the back of a spoon to spread an even layer of masa in the middle of the corn husk.

Arrange a small amount of filling down the center of the masa, then carefully fold the corn husks closed. Do this by pressing the masa dough together, then rolling the corn husk, and folding the bottom.

Step 4: Prepare the pressure cooker

Finally, get ready to cook the tamales in the Instant Pot! Place steamer rack in the Instant Pot and add about 1 cup of water.

Step 5: Steam the tamales

Place assembled tamales in the Instant Pot standing up. To cook tamales, secure lid of the Instant Pot and set the valve to pressure cooking position.

Set the timer to high pressure for 30 minutes, then allow the pressure to release naturally for 10 minutes.

If the masa looks undercooked, add a splash more water to the Instant Pot, and cook for an additional 10 minutes on high pressure.

Additionally, I like to let my cooked tamales sit for 10-15 minutes to continue to firm up.

To serve, unroll tamales from the husk and enjoy!

Storage Tips

  • Leftovers: Place leftover tamales in an airtight container and refrigerate for up to 5 days.
  • To freeze: Freeze tamales in a freezer safe container or bag and freeze for up to 6 months.
  • How to reheat: Warm them in the oven, air fryer, or microwave until heated through.

Do you use any seasonings, I didn’t see any listed in recipe. I need to get a steamer rack for my insta-pot so I can try this.

Hi I was wondering how much of the mass dough I should put on each corn husk?

    • Jenna | The Urben Life

Hi Grace 🙂 Great question! I'd say to use about 1/4 cup of dough, then use your fingers or back of a spoon to spread an even layer of the dough in the middle of the husk.

Hi - by (the ingredient) tamal, do you mean masa? Isn't tamal the singular of tamales? I'm confused by what ingredients I need for this recipe!

    Reply

    • Jenna | The Urben Life

Sorry for the confusion, Laura! Correct, you will need masa harina. The brand I use Maseca, has two bags and one of them says Tamal on it. I will make a note of it in the recipe.

Hi Taylor, thanks for your comment! I have only used Maseca Tamal Instant Corn Masa Mix to make tamales.

Bob's Red Mill has an organic masa harina, that can be used to make tortillas and tamales. Here's a link to that, if you're interested in checking it out: https://amzn.to/2R36h0x

FAQs

What can I use instead of lard in tamales? ›

Vegetable shortening is a meat-free and dairy-free substitute for lard, allowing you to serve tamales to meat eaters and vegans alike. That said, there are other substitutes for lard that will work well in tamale recipes as well, like refined coconut oil, butter, and avocado oil.

How long do you steam tamales in the Instant Pot? ›

Steam Tamales in an Instant Pot:

Lock the lid in place and turn the valve to Sealing. Press the Manual/Pressure Cook button and set the cook time for 38 minutes at high pressure. Let the steam release naturally for about 10 minutes, then turn the valve to Venting to release any residual steam.

What does lard do to tamales? ›

Making the Masa

Great masa para tamales starts with fat—and lots of it. Tamal dough should be rich and supple. This is not only for flavor, but for ease of shaping and proper texture. The fat in the masa is typically lard, but experimenting with different fats is a fun way to add flavor to the masa.

What is the best way to cook tamales? ›

Arrange tamales in a steamer basket. Place over simmering water and steam for 1 hour. Remove tamales from husks. Drizzle with remaining chile sauce and top with sour cream, or mix sour cream into chile sauce first for a creamy sauce.

What is the best fat for tamales? ›

Lard makes tastier and fluffier tamales than other fats do. You can replace the lard with solid fats, like duck fat or shortening, to obtain a similar texture; butter and liquid oils work but will make a denser masa.

How much water do you put in a pot to steam tamales? ›

Steaming/Stove top

Remove tamales from bag and place them on steamer pot facing up. Add 2-3 inches of water to pot, make sure water does not touch tamales. For better results, cover pot with plastic wrap or aluminum foil and lid. Cook on medium low heat.

What is a common mistake when making tamales? ›

One of the most common mistakes we've experienced with making tamales is having corn husks that are not soft enough to maneuver, fold, and seal. In order to have a husk that doesn't split and can be easily sealed together, you'll need to make sure to fully submerge your corn husks before you start filling and wrapping.

How much lard for 3 pounds of masa for tamales? ›

Ingredients and ratio:

The big three ingredients are masa, lard and beef. The masa and lard will make the base of the tamale dough, in a ratio of 5 pounds masa to 1 pound lard.

Why do you put baking soda in tamales? ›

Baking powder prevents the tamales chewiness rise caused by a decrease in fat content. At a high fat content, baking powder does not cause major changes in tamales texture. In the absence of fat, the leavening agent causes a desirable tamales texture.

Should I cook tamales standing up or laying down? ›

Arrange the tamales vertically in the basket.

Place each of the tamales into the steamer basket so they're standing with the folded ends on the bottom. The open ends should be facing up. Position the tamales so they're packed and won't fall over.

How do you steam tamales quickly? ›

Option one: How to use a steamer to reheat tamales:

  5. Steam for 20-30 minutes until soft.

Do tamales need to sit after steaming? ›

If serving right away, remove the tamales from the pot and place on a serving platter. Cover with a clean dishtowel and let sit for 30 minutes to finish cooking. If you are not serving the tamales right away, you can turn the heat off of the pot once they are done cooking.

Do I need to add lard to prepared masa? ›

Prepared masa usually already has been mixed with lard or vegetable shortening, broth salt & baking powder. Just like recipe in this post. Unprepared masa is usually just the ground corn in a solid form. Then you can add the ingredients to prepare it for the tamales.

Can I use bacon grease for tamales? ›

You can use bacon fat instead, but it'll give the tamales an intensely smoky flavor that you may or may not like.

Is lard same as Crisco? ›

Is lard the same as Crisco? In a word, no, but they can be used for similar purposes. Lard is made from rendered pork fat, while Crisco is vegetable shortening made from palm oil and soybean oil. Crisco can be used in pie crust recipes and for frying.

What do you add to lard to make a substitute? ›
