Oh, tis the season… for 102 Gluten Free Cookie Recipes!

Well, you might be reading this post in July, and it will be just as awesome, I promise. But there is something about December that brings out the Cookie Monster in me.

I swear I can pass up cakes and pies and fudge and flan… but when it comes to little, crumbly bites of sugary bliss, I’m dead in the water. I’m goo in the sand. I’m pied to the piper.

It doesn’t matter that they are gluten free. I’m still puddy in the cookies’ hands.

And a quick note before you start pouring through these guys, If a recipie has a blend of what appears to be light flours, I’ll usually just add them all up for volume and use my trusty Bob’s Red Mill Gluten Free All Purpose Baking Flour.

I buy it in bulk from Amazon because the price is better. I’ve included my affiliate link below for easy purchasing right from this post!

No more delaying…

FAQs

How can I improve my gluten-free cookie texture? ›

You need a binding agent in your gluten-free cookies recipe; otherwise, your cookies will fall apart. Some flour blends may already contain a binding agent, so double-check the list of ingredients. If it doesn't, you can add flaxseeds, xanthan gum, or guar gum.

What is the number 1 Christmas cookie? ›

Based on this data from General Mills, Peanut Butter Blossoms are the most popular Christmas cookie in the country; it's the most-visited cookie recipe in seven states, which means it's the most common favorite cookie in the U.S. That's a pretty high honor!

Why are my gluten-free cookies dry? ›

Gluten-free baked goods have earned the reputation of being dry and gritty. That grit—that evil grit! —is the result of gluten-free flours that are often high in starches and rice flour, which take longer to absorb moisture than regular “gluten” flour.

How to stop gluten-free cookies from spreading? ›

Learn to keep the dough cold by working with one piece at a time, leaving the rest in the fridge. Put your cookie dough, already rolled dough or even an entire cookie sheet with cut cookies on it in the fridge when it's too soft. This helps cut cookies hold their shape and overall decreases spreading during baking.

Which gluten free flour works best in cookies? ›

Almond flour is a grain-free, protein-rich flour that lends well to cookies, cakes, and more! Almond flour is made from blanched almonds, meaning without skins (as opposed to almond meal, which is made from raw almonds with skins). This is why it has a fluffy, light texture and pale golden color.

Is there a trick to baking with gluten free flour? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

What is the least favorite Christmas cookie? ›

On the naughty list of cookies, Americans gave the lowest win records to anise cookies, which only won 29% of its matchups. Other low performers included chai sugar cookies (30%), pfeffernusse (31%), spritz cookies (32%), and meringue cookies (34%).

What is Santa Claus's favorite cookie? ›

What is the #1 best selling cookie in America? ›

Oreo is the best-selling cookie in the world. It is now sold in over 100 countries. Oreo was first produced in 1912 by the National Biscuit Company, now known as Na-Bis-Co.

What holds gluten-free cookies together? ›

Binding agents (such as xanthan gum, guar gum, or flax) help give gluten-free baked goods the elasticity needed to create structure — so if your favorite gluten-free flour mix doesn't contain one, you'll probably want to add one.

Should I add xanthan gum to gluten-free cookies? ›

Using xanthan gum helps provide some of the stickiness that gluten free goods lack, replacing some elasticity. Xanthan gum mimics some of gluten's most essential properties by sticking to flour and its moisture. This helps create moist goods that hold their shape after being baked.

How do you thicken gluten-free cookies? ›

If your cookies are too thin and crispy, use soft butter, do not chill the dough, bake less time and consider raising the temperature of your oven by 25 degrees.

How to tell when gluten-free cookies are done? ›

While visual cues like the toothpick test and pressing the top of the cake will still help, the best way to determine if your baked goods are perfectly done is with a timer and oven thermometer. This is because gluten-free treats often look underdone and slightly wet inside after baking.

Why do gluten-free cookies taste weird? ›

Any taste differences also depend on which flour or flours are used and in what proportions. The variety of gluten-free flours is advantageous in that they can be blended to achieve the results that bakers want. Baking with gluten-free flour will produce some slight differences in taste or texture.

Why are my gluten-free cookies gummy? ›

Why your toothpick may be lying. With gluten-free baking, we use a combination of gluten-free flours, starches, and a binder (like xanthan gum). These ingredients take longer to set than regular gluten-containing flour, meaning they may remain slightly “gummy” or sticky until they have cooled.

How do you improve cookie texture? ›

Chill the Cookie Dough

It not only ensures a thicker, more solid cookie but an enhanced flavor as well. In these soft chocolate chip cookies, for example, it helps develop a heightened buttery, caramel-y flavor. Cold cookie dough is also easier to handle and shape.

How to improve the texture of the baked products made using gluten free flour? ›

Gums and Binders

Eggs can replace many of the functions that gluten provides, such as binding, enhancing texture and helping set the structure of the final product. Besides eggs, which are protein-based, two starch-based products often used to bind and thicken gluten-free baked products are guar gum and xanthan gum.

How to make gluten-free not gritty? ›

As long as you have the time, it's better to let your batters and doughs sit. This will give flours and starches time to absorb liquid, which will prevent your recipes from developing a gritty, sandy texture. We recommend covering your batters and doughs and letting them rest for at least half an hour.
