Pasta Sauce: No-Cook Freezer Cooking Recipe - Makes 38 Cups! (1)

We’re filling our freezer with meals for Alex and La. Their first baby will be here soon and we want to make those first few months easier for them.

This sauce is one that can be used for so many different meals. This time, I’ve used half for chicken parmigiana (recipe coming soon) and baked pasta with sweet chicken sausage (also coming soon). It can also be used to make Spanish rice, lasagna, spaghetti, and any other recipe that calls for a red tomato sauce.

I used Costco’s brand organic tomatoes, sauce, and paste so I’ve included the can sizes for them as well as the total quantity should you use a different brand or size.

This makes an enormous batch of spaghetti sauce so make sure the pan or bowl you choose is large enough. Also, avoid a plastic container to prevent staining.

Type:OAMC

Yield:38 cups

Prep Time:

Total Time:

Ingredients

  • 48 oz tomato paste (8 6-oz cans Kirkland Organic Tomato Paste)
  • 7 cups hot water
  • 102 oz canned diced tomatoes (juice included - 7 14.5 oz cans Kirkland Organic)
  • 105 oz tomato sauce (7 15-oz cans Kirkland Organic)
  • ¾ c finely minced white or yellow onion
  • ½ c finely minced green pepper (seeded)
  • ¼ c finely minced garlic (approximately 12 cloves)
  • 1 Tbl dried basil
  • 1Tbl dried thyme
  • 1Tbl dried oregano
  • 2 Tbls salt
  • ½ tsp pepper

Instructions

  1. This makes approximately 38 cups of sauce so make sure your pan or bowl is large enough. I use a large stockpot.
  2. In a large stockpot, add the tomato paste. Slowly stir in the hot water until the sauce is smooth.
  3. Stir in the diced tomatoes and their juice, tomato sauce, onion, green pepper, garlic, basil and seasonings.
  4. Stir until well combined.
  5. Taste test by putting a few teaspoons into a microwave safe dish and microwave or 1 to 2 minutes. Add additional spices, onions, or garlic to taste if necessary to the pot and re-taste. Heating it is important, trying it cold won't give you its true flavor.
  6. Package in freezer bags, freezer containers, or use in recipes.

I plan to do a ton of bulk cooking in a few months to prepare for when the baby arrives. I did that with my last baby and I found it was so helpful. My husband usually makes our pasta sauces but I think I’ll give it a try myself. This looks great.

How many jars of spaghetti sauce for 30? ›

For tomato-based sauces, a good rule of thumb to follow is to use one jar of 24-ounce pasta sauce for every 16-ounce package of pasta. When calculating how much sauce for pasta per person, generally about 2 to 4 ounces (1/4 to 1/2 cup) of sauce for each 2 ounce (about 1 cup cooked) serving of pasta would be needed.

How much pasta sauce for 1 pound of pasta? ›

An average ratio of tomato sauce to pasta is 1 1/2 cups of sauce to 1 pound of pasta. For oil-based sauces, use 1 cup per 1 pound of pasta. Go even lighter with creamy, rich sauces. Typically, we like the ratio of one jar of our sauce to 1 pound (or package) of our pasta.

You should roughly get 2 1/2 cups of sauce which is enough to coat 1 pound of fettuccine pasta. Adjust the amount of pasta you toss it with if you like it more saucy. What is the difference between white sauce and Alfredo? A traditional Alfredo sauce is made with butter, cream, Parmesan cheese and garlic.

Can you freeze homemade spaghetti sauce and noodles together? ›

Can you freeze spaghetti that has already been mixed with sauce? Yes, but follow the same method as above when you thaw it out and let it come to room temperature before reheating in the microwave. If you want to reheat cooked pasta and sauce on the stove, use a non-stick pot with a lid.

Almost all pasta in the U.S. comes in a 1lb. container (16 ounces).

How much pasta will 1lb feed? ›

Most recipes call for one pound of pasta — which is a standard box or bag — to serve four to six people. It's far easier to eyeball this than fuss over specific measurements. I find that half the box, or a half-pound (eight ounces) of pasta, serves two to three people, depending on sauce and hunger level.

Is shredded or grated parmesan better for Alfredo? ›

Cheese – When you're making homemade Alfredo sauce you need lots of good quality Parmesan! You'll want shredded Parmesan cheese, not the dry powdery stuff.

How to keep Alfredo sauce creamy? ›

Mix the cornstarch with some cold water to create a smooth slurry, then whisk it into the sauce while cooking over medium-high heat for a few minutes. Add all-purpose flour. Another very common thickening agent that will give your Alfredo sauce a creamy texture.

How to make pasta sauce stick to pasta? ›

Once the pasta is in the sauce, add pasta water. This is the most vital step in the process. Starchy pasta water doesn't just help thin the sauce to the right consistency; it also helps it cling to the pasta better and emulsify with the fat and cheese you're going to be adding.

Should I freeze my homemade pasta sauce? ›

Once opened, jarred pasta can be frozen for longer storage. "You can freeze any unused sauce in an airtight container. Use it within six months for the best quality experience," says Birmingham. Homemade pasta sauce can also be frozen as long as it doesn't contain cream or cheese.

Is it better to freeze pasta with or without sauce? ›

Our favorite way to freeze pasta dishes is to freeze the sauce and the noodles separately. Not only does this keep the consistency in a good place, but your noodles won't absorb the sauce in your freezer AND it looks cool so wins all around!

Souper Cubes 1/2-Cup Freezing Tray with Lid

That means your sauces won't suffer from being repeatedly thawed and refrozen in larger containers—a process that can ruin them.

I have learned that 25 pounds of tomatoes make about 40 cups of sauce (20 small jars, or 8-10 large jars). So if you need more (or less) than that, grab tomatoes accordingly. Here's the Italian tomato sauce recipe!
