Easy Avocado Feta Dip. Less than 10 ingredients, and quick to make. Loaded with avocado, tomatoes, red onion, feta and parsley (or use cilantro!). This dip is a must for any occasion and is always a hit with friends and family.

  • Yield: about 4 cups 1x
  • Category: snacks
  • Method: dip
  • Cuisine: American
  • Diet: Gluten Free

Ingredients

Scale

  • 2 ripe medium avocados, fleshed and diced
  • 4 ounces feta (block will yield best taste and texture)
  • 3 medium Roma tomatoes, seeded and diced
  • 1/3 cup diced red onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped parsley (or cilantro)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • 1/2 teaspoon fine sea salt, or to taste

Instructions

  1. Check avocados: Make sure your avocados aren’t too soft so they hold their texture better.
  2. Cut 4oz block of feta into cubes.
  3. Add all ingredients: In a medium bowl add diced avocado, feta, diced tomatoes, diced red onion, minced garlic, chopped parsley or cilantro, extra virgin olive oil and vinegar. Sprinkle with salt.
  4. Gently fold together ingredients with large spoon until combined. Be careful not to mash avocado.
  5. Serve: Transfer dip to serving bowl, serve with crackers, chips, flatbread or on its own.

Notes

Store leftovers in covered container – cover with plastic wrap and gently press into dip before placing lid on. Leftovers should keep okay (without avocado browning too much) for about 3 days.

This is absolutely delicious! I made it as an appetizer with tortilla chips for a dinner party last night, but the small amount leftover, I ate tonight for dinner with a spoon! What a great fresh change from guac or overly-cheesy dips.

This is AMAZING! I have taken it to several gatherings, and at each one, several have asked for the recipe. Such a healthy, yet delicious treat. I usually serve it with tortilla chips, but it could be even healthier by itself or with something else.
