Chocolate and pumpkin is a great couple, aren’t they?

I mentioned on Monday that we just used up our last bag of homemade garden tomato sauce that I froze. The same goes for pumpkin! When making this pumpkin pudding, I had to reach for my last bag of frozenpumpkin puree.

I’m always a bit sad seeing the last bag gone, but it’s a great feeling knowing all the vegetables get used with love. We just planted our pumpkin seeds last week so already I’m planning for some Summer pumpkins! Are you guys ready for the pumpkin dance? Prepare yourself… hopefully, I’ll be dancing with happiness soon!

Lots of people think Pumpkin is only for Fall months but I don’t agree with that. I think Pumpkin is great for the summer months for cool treats.

Besides this chilled pumpkin pudding, what about pumpkin pretzel fudge or pumpkin milkshakes? Delicious, right?

My observation is that kids love desserts. I love desserts. They are my favorite part of the meal. Or just sometimes the only part of the meal.

But desserts often mean a whole load of sugar and unhealthy ingredients. This makes you think twice before making any desserts. If that’s so, opt for healthy desserts.

This Pumpkin Pudding is awesome for so many reasons. For one, you are using 1 and a half cups of pumpkin so it’s full of fiber! I totally recommended for babies, too (just skip the extra chocolate chips on top!)! And this is great for healthy desserts option for kids’ parties.

Make note, mommies of picky eaters:I recommend the good ol’ trick of making this recipe for pumpkin haters. Having them exclaim how great it is, and then laughing and telling them how much pumpkin they ate! Oh, I love being mean!

Dairy-Free Vegan Pudding

This Chocolate Chip Pumpkin Pudding is not only healthy, but it’s also a dairy-free vegan pudding. If you have just gone vegan and missing out on the puddings, this vegan pudding is pure comfort food. The pumpkin in this vegan pudding adds richness to the chocolate pudding.

If vegan is important to you, just make sure you read the ingredients to make sure your chocolate chips are vegan. If it’s not important to you, just buy whatever chocolate chips you want!

You are using 1.5 cups of pumpkin to 1 cup chocolate chips so you’d think this is super pumpkin tasting, but it’s not. It’s still super rich in chocolate tasting to the extent that people who don’t like pumpkin (gasp!) will still be licking their dishes when they’re done.

Chocolate Chip Pumpkin Vegan Pudding

Chocolate Chip Pumpkin Pudding recipe. This vegan pudding can be great as delicious healthy desserts or snack! You can also serve this as healthy baby food.

Ingredients

  • 1 cup chocolate chips
  • 1 1/2 cups pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar

Instructions

  • Place the chocolate chips in a microwave save dish. Heat for 30 seconds and stir. Continue to heat in 10 second increments until the chocolate chips are completely melted.

  • Put all ingredients into a food processor and pulse until it is smooth.

  • Put in bowl and chill in refrigerator until firm, reaching a pudding consistency.

  • Serve in bowls, with additional chocolate chips on top if desired.

    By the comments, I’d say pumpkin and chocolate is the up and coming thing. I have to agree with everyone. I have made pumpkin bread with chocolate chips and it is yummy. Have to try this pudding.

    Thanks so much for the recipe! I am totally hooked on this! I have loved using pumpkin as a filler for sweet things but rarely get the proportions right, so this works a treat. I do a similar thing with porridge too actually! And I agree 100%…chocolate and pumpkin are a special kind of happy couple <3

    This looks delicious and healthy! I love that you have homemade pumpkin puree stashed in your freezer! Your freezer must be gynormous and I am uber jealous. I had to empty the ice bin yesterday to fit some homemade chicken stock. Hubs was like, “why is there chicken stock in the ice bin?” Hush, who runs this kitchen anyways?

      Sadly my freezer is not that big, it just becomes very intense in July/August to the point of running every time you open the door because something might fall out on your toes! One day I’ll have a big one! 🙂 I totally love that you did that to the ice bin.. I think it’s a great idea! 🙂

      Me too! Its rarely sold here in London! Even the canned pumpkin is over priced + hard to find. When i’m craving pumpkin soup and can’t be bothered to find, pay + peel for a pumpkin; i just mix up a combo of sweet potatoes, potatoes, carrots + parsnip – the taste and texture is so similar and it is so much easier to prepare too 🙂 – cheat style!
