Köfte (or kofta) is a family of meatball or meatloaf dishes found in the Indian subcontinent, South Caucasian, Middle Eastern, Balkan, and Central Asian cuisines. In the simplest form, koftas consist of balls of minced or ground meat—usually beef, chicken or lamb—mixed with spices and/or onions.

In Turkey, köfte is one of traditional staple. There are hundreds of different varieties and vary greatly in size and shape.

Some are long and thin- we call it parmak köfte, typical to İnegöl Köfte.

Others are balls, and others are patty shaped typical to kasap köfte or Pideli köfte.

Or when you visit Bursa you should tryPideli Köfte, it's a small flat patty shape meatball served overpideflat bread flush with yummy tomato sauce then "fizz" with hot melted butter. You can check how to make it homehere.
There is anotherköftefrom İnegöl town named İnegöl Köfte.Eachköfte(meatball) has own typical.


Köfte variant also can be determined base on meat used.It can be made from beef, lamb, or a combination of the two. Sometimes chicken or turkey (in Turkish language we call it "hindi tavuk" 😊)

And kebab isa dish of pieces of meat, fish, or vegetables roasted or grilled on a skewer or spit(a long, thin metal rod pushed through meat in order to hold and turn it while it is roasted over an open fire.)

The kebab generally serve in portion together with bulgur pilav, lavaşh bread, onion salad and ayran drink. Grilled tomato and carliston chili pepper (banana pepper) also served along.

Also sometimes if we want simple one, we can get roll version in lavaşh flat bread roll with some vegetables callsdürüm.



So today I will share another family's faveKöfte Kebabor grilled kofta. And this time I am using turkey meat (turkçe: hindi). I just love the turkey meat better than chicken even they are same in poultry family 😊

But if you want to use chicken meat, you can. But if you want to use lamb / mutton or beef. you can check mylamb köfte kebab here.

Tavuk / hindi Köfte Kebabı ( Turkish style Chicken or turkey Kebab, best recipe)

İngredients:
🍗 800 gr minced turkey (or you can use chicken)
🍗100 gr fat (turkey/ chicken/ beef fat, minced)
🍗100 gr bread crumb
🍗1 big ( or 2 medium) yellow onion, finely shredded
🍗3 cloves of garlic, finely mashed
🍗1 tsp salt or to taste
🍗1 tsp baking soda
🍗3-4 tbsp Turkish spice mix, see how to make it here (*)

(*) You can replace with:
3 tsp smoke paprika
2 tsp cayenne chili powder
1 tsp black pepper powder
1 tsp cumin powder
1 tsp urfa/ isot biber flake
1 tsp dried thyme

What you need:
Metal or bamboo flat skewer

Grilling our köfte over charcoal - best way to cook köfte/ kofta

How to make:

🔪İn a big mixing bowl place all ingredients. Knead them until well combine. Continue to knead- lift up the meatball mixture and lightly throw it against the bowl. Do it for about 4 to 6 minutes until you get slightly harder texture meat dough. The meat should easily gather together into a ball. Check the taste by fry a little pinch of kofta mixture.
Cover the bowl with plastic wrap and let it rest in the fridge for about 30 minutes.
Note: You can make it in advance until this step. Keep it over night.

🔪İf using a bamboo skewer, soak them previously in water for few minutes. Drain.

🔪Lightly wet your palm with oil, take the meatball about one small fist then wrap long around the skewer. Do to all meatball dough until finish.

🔪Grilled over charcoal or roasting oven until it cooks through. If you grill in the oven, place a rack over an oven tray then grill the kofta over that rack. The oven should be preheated first at 200℃.

Serve withayran drink,pickles, tomato, and onion salad.

Naahh.... untuk pecinta makanan Türki hari ini resepnya pas banget... Köfte Kebab 🍡


Salah satu makakan favorit anak dan suami adalahköfteatau meatball khas Turki. Yaaa... seperti kebanyakan favorit keluarga lokal disini ya. Kali ini saya bikin köfte kebab. Sekilas mirip dengan Adana kebab yang saya posting sebelumnya... tapi ini beda banget. Köfte kebab ini berbahan dan berbumbu sederhana layaknya köfte atau meatball tapi saya susun dalam tusukan bambu dan dibakar diatas arang menyerupai kebab.


Di Turki sendiri ada banyak macam köfte(metaball) berdasarkan bahan atau daerah asal. Tiap region mulai timur hingga barat mempunyai jenis köftenya masing-masing. Misalnyaizmir köfte, atau yang terkenal dari Bursa adalahpideli köftedan inegöl köfte dari İnegöl. Belum lagi içli köfte atauçiğ köfte...semua sudah pernah saya posting ya sebelumnya...tinggal diaduk-aduk aja list diside bar saya...😊

Selain berbahan dasar daging sapi atau kambing, köfte bisa dibuat dengan bahan dasar ayam dan ayam kalkun lho. Ayam kalkun dalam bahasa Turki disesbut "hindi". Tekstur ayam kalkun lebih kenyal dari daging ayam walau termasuk satu keluarga ya...🦃
Makanya saya suka sekali masak dengan daging kalkun ini.
Ehh.. tapi kalau pengen coba bikin dengan daging kambing atau sapi bisa dicek disini ya resepnya.


Tavuk / hindi Köfte Kebabı ( Kebab kofte khas Türki)

Bahan-bahan:
🍗800 gr daging kalkun cincang (bisa juga pakai ayam cincang)
🍗100 gr lemak kalkun (atau ayam/sapi, cincang )
🍗100 gr tepung roti
🍗1 bawang bombay ukuran besar ( atau 2 ukuran sedang), diparut halus
🍗3 siung bawang putih, parut halus
🍗1 sdt garam atau sesuai selera
🍗1 sdt baking soda
🍗3-4 Sdm Turkish spice mix, Lihat resepnya disini(*)

(*)atau bisa pakai bumbu dibawah ini:
3 sdt bubuk smoke paprika
2 sdt bubuk cayenne chili (bubuk cabe merah)
1 sdt merica hitam/ putih bubuk
1 sdt bubuk cumin / jintan
1 sdt urfa/ isot biber flake- bisa diganti dengan cabe flake semacam b*n cabe
1 sdt thyme kering

What you need:
Tusukan bambu atau metal berbentuk pipih tipis

Cara memasak kebab ya paling afdol dengan arang ya.. Tp bisa juga dalam oven. Check resepnya 😊

Cara membuat:

🔪Masukkan semua bahan dalam mangkok besar. Uleni hingga tercampur rata. Lalu banting-banting adonan sampai terasa agak kenyal dan tidak lengket di mangkok. Banting-banting terus lagi kurleb 5-6 menit.
Tutup mangkok dengan plastik film dan istirahatkan dalam lemari es kurşeb 30 mnt atau semalaman.

🔪Jika menggunakan tusukan bambu, rendam dulu dalam air beberapa menit sebelumnya lalu tirisan.

🔪Basahi telapak tangan dengan sedikit minyak, lalu ambil adonan sekepal kecil lalu balutkan ditengah tusukan kebab, merata jangan terlalu tebal. Lakukan hingga habis.

🔪Panggang diatas arang hingga matang. Jika dipanggang dalam oven, panaskan dulu oven suhu200℃ paling tidak 10 menit sebelumnya. Ambil loyang panggang dan taruh rak diatasnya. Panggang köfte diatas rak tersebut. Panggang hingga matang kurleb 20 menit, balikkan sekali untuk matang merata.

Sajkan dengan minuman yoghurtayran ,acar timun, irisan tomat dan irisan bawang bombay.
